Soil That Works, and Crops That Forgive Beginners
Feed the Soil, Not the Plant
The single most useful idea in vegetable growing: your job is to build soil that holds water, drains freely, contains air, and is alive with organisms. Plants growing in soil like that largely look after themselves. Plants in poor soil need constant intervention and still disappoint.
Find out what you have. Take a handful of moist soil and squeeze it.
- Falls apart immediately, feels gritty: sandy. Drains fast, warms early, loses water and nutrients quickly.
- Forms a sticky ball you can roll into a sausage, feels slick: clay. Holds water and nutrients, drains badly, cold in spring, sets like concrete when dry.
- Forms a ball that crumbles when poked, feels slightly greasy: loam, which is what everyone is trying to create.
The remedy for both extremes is the same thing: organic matter. Compost, well-rotted manure, leaf mould. In sand it acts as a sponge and holds water; in clay it opens the structure and lets water and air move. This is unusual and convenient — one intervention fixes both opposite problems.
How much: a layer of 5–10cm of compost spread over the bed, every year. That is a lot of compost, and it is the honest answer.
Filling a New Raised Bed
Do not fill a raised bed with topsoil alone, and certainly not with subsoil from a building project. A workable mix, roughly:
- 50–60% good topsoil or screened loam
- 30–40% compost — municipal green waste compost, well-rotted manure, or your own
- A small proportion of something for structure in heavy mixes, if drainage is a concern
For deep beds, a common trick is filling the bottom third with woody material, branches, and rough organic matter, and the top two thirds with the mix above. It is cheaper, and the wood rots down into a moisture-holding sponge — at the cost of the bed level sinking noticeably over the first two years.
Expect settlement regardless and plan to top up with compost every spring. A bed that arrives full and stays full is a bed that is not decomposing.
Compost, Briefly
A compost heap is the cheapest ongoing supply of the thing your garden most needs.
Roughly equal volumes of greens (kitchen scraps, grass clippings, soft prunings — the wet, nitrogen-rich material) and browns (cardboard, dry leaves, straw, paper — the dry, carbon-rich material). Too many greens produces a slimy, smelly heap; too many browns produces something that just sits there for two years.
Keep it as damp as a wrung-out sponge, turn it occasionally if you can be bothered, and accept that it will take six months to a year. Keep out cooked food, meat, dairy, and oils, which attract rodents, along with diseased plants and any perennial weed roots or seed heads, which survive the heap and get spread around the garden with the finished compost.
pH, and When to Care
Soil pH determines whether nutrients present in the soil are available to plants. Most vegetables want 6.0 to 7.0 — slightly acidic to neutral. A cheap test kit answers the question in ten minutes.
In practice, most garden soil sits close enough to that range to grow vegetables without intervention, and adding lime or sulphur without testing is a good way to create a problem. Test if plants persistently do poorly for no visible reason; otherwise this is not where beginners should spend their attention.
Crops That Forgive Beginners
The first year’s crop list should be chosen for tolerance rather than ambition. These are widely reliable, though every region has its own quirks — local growers are always worth asking.
Salad leaves and lettuce. Fast, shallow-rooted, happy in containers, forgiving of partial shade. Sow a short row every two or three weeks rather than everything at once, and pick the outer leaves rather than the whole plant for repeat harvests over weeks.
Radishes. Ready in about a month, which makes them the best possible crop for anyone who needs to see something happen. Excellent for interplanting between slower crops.
Bush beans / dwarf French beans. Sow directly into warm soil, need no support, and produce heavily. Picking them frequently makes the plant produce more.
Courgettes / zucchini. Almost aggressively productive — two plants will feed a household and possibly the neighbours. They need space, sun, and water, and they are the crop that teaches people to stop planting six of everything.
Chard and kale. Nearly indestructible, tolerant of poor conditions and cold, and harvested leaf by leaf over months rather than all at once.
Bush tomatoes, in a warm sunny spot, in a large container or bed. Not the easiest crop on this list — they want feeding, consistent watering, and warmth — but they are the reason most people start growing anything, and a bush (determinate) variety avoids most of the pruning and training complications.
Herbs. Mint (in a container, always, or it colonises everything), chives, parsley, thyme. Cheap to grow, expensive to buy, used constantly.
Spring onions, beetroot, and carrots in loose stone-free soil round out a beginner list well.
What to Leave for Later
Not because they are impossible, but because they punish inexperience: cauliflower and celery, which are fussy about consistency; sweetcorn, which needs a block of plants for pollination and a lot of space; melons and aubergines outside genuinely warm climates; anything perennial like asparagus, which occupies a bed for years before producing; and large brassicas, which are a caterpillar and pigeon magnet requiring netting.
Sowing: Direct or Started Indoors
Direct sowing means seed straight into the ground where it will grow. Right for root crops, which resent being moved — carrots, radishes, beetroot, parsnips — and simplest for beans, peas, salad, and chard.
Starting indoors in trays or pots, then planting out, buys you weeks at the start of the season and protects tiny plants from slugs at their most vulnerable. Right for tomatoes, peppers, courgettes, and brassicas in cooler climates.
Sow at the right depth, which is roughly two to three times the seed’s own width — the most common cause of seeds that never appear is burying tiny seed far too deep. Fine seed is scattered on the surface and barely covered.
Timing is entirely local. Seed packets state timings for the country that printed them. What actually governs your dates is your last expected frost in spring and first expected frost in autumn, which you can look up for your area. Tender crops go out after the last frost; hardy crops tolerate cold and can go much earlier.
Hardening off is not optional. A plant raised on a windowsill has no defence against wind, direct sun, or cold nights, and moving it straight outdoors will check its growth or kill it. Put plants outside for a couple of hours a day and increase gradually over a week to ten days before planting out.
Thin the seedlings. Sowing produces more plants than the space can support, and leaving them crowded produces a mat of weak seedlings and no crop. Thinning feels wasteful and is the difference between radishes and a row of leaves. Snip the surplus at soil level with scissors rather than pulling, which disturbs the roots of the ones you are keeping.
